Spaghetti Squash


Oh, veggie of veggies. Chris and I discovered spaghetti squash a few months ago and have never looked back. It's incredibly filling, and will take on the flavoring of whatever you choose to put with it. We've made a baked macaroni and cheese out of it, but usually we roast it and serve with tomato sauce. Here's the 411... 

Cut your squash in half and place on a baking sheet. Place in the oven for 30 minutes on 350. It may take longer depending on the size of your squash - you'll know its ready when you can easily use a fork to scrape the strands. The squash will come out in long strands like what you see above, and it's ready to go! We usually warm up some tomato sauce in a saucepan and serve over the squash. We can keep our squash in a covered dish for about 5 days in the fridge - we definitely eat it all! It's such a quick and easy meal or side during the week.
