Eat : Pad Thai


Pad Thai is one of my favorite things to order at Asian restaurants. But sometimes the portions are so big... and it can feel really heavy because of how much sauce is used. This is a great lightened up version that's super easy to make at home. Let's roll!



You'll need...
- 6 tablespoons soy sauce
- 2 tablespoons brown sugar
- 2 tablespoons lime juice
- One lime, sliced
- 3 green onions
- 2 eggs
- 1/2 cup chopped peanuts
- 1 teaspoon minced garlic
- 1/4 cup chopped cilantro
- Half a box of rice noodles (I get mine at Target)


1. Soak the rice noodles according to the box directions. Mine said to place the noodles in a bowl with very hot water and let sit for 25-30 minutes. It's important not to oversoak - they might not seem very tender when time is up, but don't worry. They'll get softer when we throw them in the pan later. 

 2. While the noodles are soaking, go ahead and chop up your cilantro, peanuts and green onions. For the green onions, cut off the rooty ends, then chop the white section into small slices. The leafier green section you can chop into 2 inch ribbons. Set aside. 

 3. You can also go ahead and make the sauce. Whisk together your soy sauce, brown sugar, and lime juice until sugar has dissolved. You can also add a splash of sriracha if you're feeling adventurous! I put a tiny bit in now, and then Chris adds more to his once he has his own bowl.

 4. Place a large pan on your stovetop over medium high heat. Add a couple tablespoons of oil. At this point, you want all of your ingredients nearby because it's going to go fast from here! Drop your minced garlic and the white slices of green onion to the pan. Saute until fragrant (should only be about 30 seconds). Add the eggs and toss them around with the garlic and onion. Don't let your eggs get completely done! You want them almost  done - should only be in the pan for about 1 minute. They'll finish cooking up in a minute. Place your eggs on a small plate nearby.

 5. Now toss your noodles into the pan with the green ribbons of onion, and add your sauce. Toss around until noodles are soft - about 1 minute. This is a good time to pull apart some of the noodles that have gotten stuck together (they do that). Add the eggs back to your pan and break them up gently. Toss around for one more minute and then you're done!

 6. Serve into bowls - add chopped cilanto and peanuts on top. Drop in a lime wedge. Set out soy sauce and srircha for your hubs/roomie that likes it saltier and spicier than you do.  


YUM. Just look at that deliciousness! Makes you feel proud, right? 



It really is so easy - and because it goes fast, it can be really fun! This is also something fun to make with someone if you want to. I've also added chicken to this dish and it's tasty. I would think shrimp would be awesome too. Feel free to make more sauce than I do as well - remember, this is a lighter dish and you might feel like you're missing some of that sauciness that you get at a restaurant. Do what tastes right for you!
