Eat : Easy Peasy Frittata


I got adventurous yesterday morning and made something new for breakfast. Chris and I are usually buzzing around in the morning and need something quick to throw together if we want to actually sit down and eat. I found this recipe on Love & Lemons (seriously, how gorgeous is her branding?) and knew it would be a perfect fit for us. It was SO. EASY. I do think I need a smaller pan so that our mixture will be thicker, and I need to cook it for a minute or two less than she recommended. I'd love to try some interesting ingredients as well, since frittatas are so versatile... maybe some mushrooms? Goat cheese? For my first try, I only threw in minced garlic, green onions, and mixed cheddar cheese because that was what I had on hand. Still turned out extra tasty! Phoebe was disappointed we didn't share...



You should really try making one of these bad boys. It's really just mixing and tossing in the oven, and makes you feel like you rock at life. Not bad for a weekday. (PS, thanks to Carrie Johnson for the awesome JA mugs. They look adoringly at our breakfast often.)
