Hi, friends :) It's been awhile since I've been regularly posting, and I really miss you. TPA has been an adventure in facing fears over and over – sometimes new ones pop up and sometimes it's the same old things. Thanks for giving me grace.
To get myself back in gear, I'm making myself a little bit more structure... and Friday favorites will start happening in trios! My three for this week? My three favorite things to make for dinner – I'm all about quick and easy, and the less pans, the better.
MY 3 GO-TO RECIPES
- Burrito Bowl – It's tempting for Chris and I to make this every week...! A spin on our favorite meal, we make our burrito bowls with quinoa as a base instead of rice. So much protein! You can add whatever you like to it, but we usually do diced onion and bell pepper, ground beef with taco seasoning, a splash of salsa, shredded cheese, and a whole half of an avocado. So yum (and it reheats well).
- Breakfast "Cookies" – These little cuties were supposed to be granola bars, but they came out too mushy... and ended up being better than I imagined. Made with rolled oats, honey, shredded coconut, and a handful of chocolate chips, they're a really sweet way to start your day! You could make them less indulgent and swap out the chocolate with dried fruit or nuts. I'd love to try bits of diced apple and cinnamon.
- Crock Pot Chicken Chili – Up until this winter, I'd never made chili before. Really. I found this recipe and, after making it, Chris deemed it "the best chili [he's] ever had!" I have to agree. So thankful for Pinterest and fellow blogger friends who share their knowledge with me! Bonus: I could find all of the ingredients needed at our local Trader Joe's. That place has rescued our budget, so being able to get all the ingredients from a recipe there is a huge blessing for us!
